Course Description

Your customers are relying on you to keep their food safe. If foreign substances get into the food you’re working with, it can result in contamination. This may cause your customers to not only get sick but could damage your reputation as well. That’s why the US Food and Drug Administration (FDA) has developed a regulation that establishes current good manufacturing practices for the industry—benchmarks that businesses must meet to help reduce the risk of food contamination.

In this course, you’ll learn about the US FDA’s current regulation that requires every facility that processes or handles food to create GMPs that can help protect food in all levels of their operations. This regulation is organized into seven groups, the first three of which are covered in these lessons and address Personnel, Plants and Grounds, and Sanitary Operations.

These lessons will provide set criteria for providing a contamination-free environment by maintaining the condition of your manufacturing space, the areas around your facility, and the people inside it. The GMPs for Personnel are geared toward keeping your environment clean and disease free by addressing good health and hygiene habits that reduce contaminants from entering the workspace. The GMPs addressing Plants and Grounds establish ways to keep the outside of the facility in a condition that protects against contamination by ensuring there’s enough space to separate food storage and maintenance equipment, and keeping grounds clean and secure, so pests can’t get to food or food processing areas. Finally, the Sanitary Operations GMPs address the maintenance of the manufacturing space, including when and how to use cleaning and sanitizing chemicals, pest control, and cleaning of food contact and non-food contact surfaces.

What You'll Learn

  • Define what GMPs are and why each business must develop its own set of GMPs
  • Apply best practices for implementing and maintaining good hygiene habits among personnel
  • Protect your plant and grounds from contamination through proper spacing, cleanliness, and pest control
  • Maintain sanitary operations using cleaning and sanitizing chemicals, pest control, and surface cleaning
  • Identify the FDA regulation requiring facilities that process or handle food to create GMPs

Key Takeaways

  • The US FDA has a current regulation requiring every facility that processes or handles food to create GMPs to help protect food across all levels of operations.
  • The regulation is organized into seven groups, and this course covers the first three: Personnel, Plants and Grounds, and Sanitary Operations.
  • GMPs for Personnel focus on good health and hygiene habits to keep the environment clean and disease-free and reduce contaminants entering the workspace.
  • GMPs for Plants and Grounds protect the outside of the facility by ensuring enough space to separate food storage and maintenance equipment and keeping grounds clean and secure against pests.
  • Sanitary Operations GMPs address maintenance of the manufacturing space, including when and how to use cleaning and sanitizing chemicals, pest control, and cleaning of food contact and non-food contact surfaces.
